  3. This section contains 7 ribs (6-12)
  4. with muscles second only to the Loin
  5. in tenderness. Known as Prime Rib.

  7. BACK RIBS
  8.  
  9. Narrow strips of 7 short flat bones
  10. connected with small amount of meat.
  11. Cut from rib section near back bone.
  12.  
  13. BARBEQUE RIBS
  14.  
  15. Long meaty bones with one irregular
  16. end. This is cut when rib section is
  17. used for boneless steaks or roasts.

  19. a.k.a. Beef Backs, Spareribs, Beef 
  20. Ribs
  21.  
  22. CAP MEAT
  23.  
  24. Separates rib eye muscle from outside
  25. fat in Chuck end of rib section. May 
  26. be included as part of Standing Rib
  27. Roasts or removed and used for Rib
  28. Lifters, ground beef, or stew meat.
  29.  
  30. a.k.a. Rib Cover, Rib Cap
  31.  
  32. CLUB STEAK
  33.  
  34. ╛ to 1 inch steak cut from small end 
  35. of the Rib end of the short loin. 
  36. Contains strip loin muscle covered
  37. with outside layer of fat; it may 
  38. contain part of the rib and back 
  39. bones.
  40.  
  41. ENGLISH SHORT RIBS
  42.  
  43. 5-6 inch lengths of rib bones with
  44. alternating lean and fat layers 
  45. attached.

  47. 1st - 5th STANDING RIB ROAST
  48.  
  49. Cut from small end of section near 
  50. the short loin. This cut is a little
  51. bit better than 6th-7th Standing Rib
  52. Roast near the chuck end.

  54. RIB EYE ROAST, STEAK
  55.  
  56. Boneless tender eye muscle of the 
  57. Prime Rib section with all else
  58. removed. Entire muscle weighs from
  59. 10 to 12 pounds. Steaks are thinner
  60. cut and have a lot of fat.

  62. a.k.a. Market Roast, Spencer Roast

  64. Market Filet, Spencer Steak, Rib 
  65. Filet Steak

  67. RIB LIFTERS
  68.  
  69. Narrow boneless elongated pieces of
  70. cap meat usually 1 - 2 inches thick.
  71. Coarse textured meat is less tender
  72. than Rib Eye muscle.

  74. a.k.a. Braising Strips, Boneless 
  75. Short Ribs, Market Tops
  76.  
  77. RIB STEAK

  79. Cut to include bone and muscle, and
  80. may include Rib Lifters is cut from
  81. the larger chuck end. Same as the 
  82. Club Steak which is cut from the 
  83. short loin end.

  85. 7-INCH STANDING RIB ROAST (10 INCH)
  86.  
  87. The 7-inch version has the short ribs
  88. removed whereas the 10 inch version
  89. includes them.
